Sanity rules differ by identity, and the game stores them as numbers inside each rule. Pick an identity for its exact gains, what its Sanity does to coin flips and average skill power, and an E.G.O for its corrosion chance at each Sanity value.

The rules it uses
A coin lands heads with chance 0.05 + (Sanity + 45) / 100, held between 5% and 95%. A clash win gives the identity's base amount, raised by its percentage for every exchange after the first and rounded to the nearest whole number. Kill rewards need the defeated enemy to be at least the unit's level.
Corrosion only rolls at 0 Sanity or below. The game measures how far Sanity has fallen toward -45 and checks it against the E.G.O's own table; for most E.G.O that means no chance down to -22, 25% from -23, 75% from -34 and certain corrosion at -45.
